Nutrition is always a vital element at The Dewey Schools, aims to support students in healthy development of both physicality and intelligence. Based on the Student-centered philosophy, the school meals are well-balanced in nutrition, with abundance of flavors, delicious, suitable to the students’ palette and awareness of each specific dietary restrictions.
All of the ingredients used by the schools system are strictly monitored, clean food with assured originality and beneficial for health from prestige suppliers with official accreditations. Prior to being in partnership with the school, the suppliers must pass various of inspection rounds on areas, such as: ingredients, all related and legal documentations, facilities & amenities,… in order to be accepted as TDS Grocery suppliers. In addition, the school also perform on-site random inspection of all suppliers or the delivery process to guarantee that the originality and preservation process is in accordance with the schools’ requirements.
The food menu at The Dewey School has been designed by nutritionists and specialists in order to incoperate ingredients efficiently and avoid repetition of dishes per week and per month, balance diet between meats and vegetables, ensure the quality and energy intake for each meal. On a daily basis, each meals are designed to have at least 2-3 ingredients which supplement protein, at least 3-5 types of vegetables. Protein supplement ingredients include: pork, beef (rich in iron, zinc), chicken, goose, duck (rich in zinc), shrimp, crabs, river fish (rich in calcium), clam, salmon, prawn (rich in omega 3) and other nutrients.
Apart from the main ingredients, the school also consider to increase the calcium intake by adding supplementary products from fresh milk, drinking yogurt, cheese,… to support students with the best condition to develop physical growth. The seasonal menu collection, no repetition for 8 weeks, include diverse Asian & Western cuisines, cultural delicacies, suitable for each dietary restrictions, intrigue a certain sense of excitement for the students through each school meal. Furthermore, there are Western cuisines available on Fridays, which help students to be accustomed with different types of food from around the world. A notable feature at The Dewey School is that maximizing the number of dishes the are freshly cooked in the vicinity of the school’s kitchen, rather than importing manufactured goods to ensure food safety and hygiene.
Students at The Dewey School are educated with basic knowledge about nutrition, food safety and cook at home for special occasions annually, cooking classes, farm visits,… support students in forming a healthy eating habit and learn to appreciate food, avoid food wasting. Trainings to enhance operation competency, culinary skills and nutrition knowledge are organized annually by the school to develop and closely monitor the school’s kitchen operation.
